16 years ago, I spent several months learning to sing Chinese music--and sang it in Taiwan over a ten-day period. I never had any inkling what the words meant.

Speaking of African - I had an african dish last year that was wonderful. I believe it was called "bobotti" and it was made with sausage, shredded apple, shredded onions, hot peppers and I think some curry powder.
It was very tasty! I would not have thought of putting sausage and shredded apples together but this was wonderful. Slightly sweet, with a bite and a great texture!

South African Babotie
1 slice bread
1 cup of milk
1 lb ground beef or lamb (or, I guess, sausage)
2 eggs
1 large tart apple, peeled, cored and minced
1/3 cup seedless raisins
1 medium-sized onion, chopped
1 tbsp butter or margarine
1 to 2 tbsp curry powder
2 tsps suger
1 tsp salt
1/4 tsp pepper
2 tbsp lemon juice
12 blanched almond slivers
Soak bread in milk in a bowl. Squeeze bread dry (reserving milk) and putting in a large bowl. Add the beef or lamb to bowl, along with egg, apple, and raisins. Mix well. Saute the onion in the butter in a skillet, then add the spices and sugar and lemon juice. Cook this for a minute, then add to the bowl where the meat mixture is. Spoon into a baking dish and dot with almonds. Bake at 350 degrees (F) for 45 minutes.

That also sounds like it would make good sausages. I happen to have a sausage grinder and stuffer so I might try that as well.

You can buy sausage casings pretty easily actually. We have casings for different sizes, like bratwurst and s that we keep in the fridgie...
