Would that be mild, medium, mature, extra mature or vintage?
English, Canadian or New Zealand?
Davidstow, Cathedral, Kraft, West Country, Denhay (one of my favs) Mull of Kintyre (the one I am trying at the moment.....mmmmhhhhh)?
Ooohhh, so much choice. Waitrose had 20 different cheddars in last Monday. How do I choose, except on price?

I went to find a suitably random old post to reply to, and came upon a discussion about somebody replying to a very old post.
On further inspection, I found that this was far from an isolated incident, and I hereby present you with the 16th Reply to Post 20 of No! No! No!
Following all the different replies gave me something of a guided tour of the thread, Through The Ages, as it were - I can recommend it!

'Through the Ages' Cheddar. Must be very mature. Don't gorge yourself on it.

Sounds like haddock or kippers.
Why can Cheddar come from anywhere, even another country?
The Italians get very uptight about Parma ham coming from anywhere other than Parma. Wines are supposed to have a demarcation too. You can't produce a Burgundy in Sussex!

I think the answer, watermusic, is that that concept of protected place names is rather recent, and cheddar has long since ceased any association with Cheddar. On the other hand, I wouldn't be surprised if someone from Orkney could sue someone for producing "Orkney Cheddar" in Cheddar...

The answer is that all cheddar cheeses are produced by the 'cheddar making method'. Whether they store them in caves to mature or not is possibly a different matter

But... What about Mozarella? Gouda? Edam? Monterey Jack? Asiago? Parmesan? Romano?
Man does not live by cheddar alone.
