Ooops! ..posted instead of previewed..
Anyway..next stage is to boil a gallon of water, take it off the stove and add about 2 cups of sugar and dissolve the sugar.
Cool and then pour over the elderflowers. Add 2 organically grown lemons, sliced (if not organic, peel them and throw away the peel), and 2 tablespoons of white wine vinegar. We used cider vinegar instead once, as it was all we had to hand - tasted different but still good!
Cover the bowl and leave for a day or two. Then strain the 
into clean screw-top bottles (important! every now and then unscrew the cap slightly to let the pressure out - very impressive when elderflower expodes!)
It's ready in a week..but if you can bear to leave it longer it gets better (so I'm told! 
)

I like the Campsite a lot.
It is a nice place to get away from things and unwind.

Very friendly and tame! Called Lohi Kaarme which is the Finnish for ..'Lohi' for short

There is another , named Esparoth, who visits the campsite once in a while.

Lohi Kaarme followed me home from a flying visit to Finland and now seems very at home in Wales (not surprisingly!) and I hope will be an asset to the Campsite. Delicious vege kebabs are but the work of a moment!
I'm sure Lohi and Esparoth would get on very well
