Extra sour cream with my fajitas.
Robyn is the only one around here than makes fajitas sound appealing.

I do like them to be luxurious and spicy. Personally I like to stuff the tortilla with the meat and veg, some refried beans, real fresh guacamole, soured cream and, just because it's fatty and luscious, I like to grate some cheese in there too. Some reasonably tasty cheddar does the trick I find.
I could eat fajitas twice, three times a week with variations on the meat and veg and spices quite happily...
Leftovers I like to make a sort of enchilada dish with. Just make up the tortillas with the cooked meat etc, put them in an ovenproof dish, top with some tom paste and tabasco and loads of grated cheese and whack in the oven till warmed through.
Serve up with a dressed salad and shed loads of soured cream for summer loveliness and winter warmingness. mmmmmmmmm.......
