I'm not sure saltpitre would make any sort of sauce wow wow.. unless it's like "wow wow does that thing actually work?"

Saltpetre is not an ingredient in wow wow sauce, according the Wikipedia. Here is the Wkipedia recipe:
Wow Wow Sauce: Chop parsley leaves fine; take two or three pickled cucumbers, or walnuts, and divide into small squares, and set them by in readiness; put into a saucepan a piece of butter as big as an egg; when it is melted, stir into it a tablespoonful of fine flour, and half a pint of the broth of the beef; add a tablespoonful of vinegar, one of mushroom ketchup, or port wine, or both, and a tablespoonful of made mustard; simmer together till it is as thick as you wish, put in the parsley and pickles to get warm, and pour it over the beef, or send it up in a sauce-tureen. This is excellent for stewed or boiled beef.

Since wow wow sauce is meant to be put on beef, you won't need it at all when you're not eating beef.

there is always the option of reducing tabasco to approx. 20 percent and cook some chopped piripiri chilies in it

For that type or red hot sauce I prefer Louisiana Hot Sauce.. though I like the green sauce and chipotle sauce by Tabasco. I also like La Cholula for a quick salsa.. chopped tomato and onion, coat with La Cholula and lemon.. use like you would pico de gallo
