RE different versions,I bet you could bake the batter in a couple of (non-stick!) mini loafs pans, then when cool, slice thinly. Lay the slices flat on a cookie sheet, and bake until crisp. Crackers!!

One of my favorite crackers are something called Raincoast Crisps, hideously expensive ones from Canada. BUT, you put a little Brie or goat cheese on them and they're an excuse to believe in a loving Ghod.

Couple of very quick and tasty dishes I rustled up last week from store-cupboard standbys:

Potato-choke salad

1/3 tray of marinated artichoke hearts
1 cold boiled potato (leftover from Sunday dinner)
1 tomato (or 3 cherry tomatoes)

Cut everything into bite size dice, stir together with a tablespoon of low fat mayo and a good grind of black pepper.


Tin-chili

1 tin tomatoes
1 tine red kidney beans
1 tin sliced mushrooms
1 chilli, chopped small.
1 cup stock.

Simmer all together. Lovely with heated taco shells (I discovered these have about half the calories and carbs of wheat tortilla wraps), or just heated on its own for lunch. I got about 3 servings from the above measurments.
