I don't see why Ian McKellan wouldn't want to do Dumbledore as well as Gandalf - it's not as if he's at the start of his acting career, is it?

Ian McKellen will always get work, as a wizrd or not, regardless of whether he does Dumbledore.
He's not as old as some (Christopher Lee, f'rinstance, who's in LotR and StarWars).
