from further down the page it discusses 'kippering' as preparing something like a kipper is prepared..
tr.v. kip·pered, kip·per·ing, kip·pers
To prepare (fish) by splitting, salting, and smoking.
I'm guessing kippered beef is a cow that has been treated like a fish... allowed to spawn it's brains out then split, dried and smoked..
