As long as you have plenty of the salted variant, you can add any flavour you like (or even flavours you don't particularly like for that matter). If you find a new combination you might be able to patent it and get rich(-ish).

A few year ago, a certain company had a competition, to "find" a new flavour.
I had a letter saying I was close, with my "moon cheese" flavour - oh hum!

My favourite cheese is Windsor red 
made with Port and red wine . Morrisons used to sell it but not anymore, so the only way I can purchase it is at an online cheese shop website.
