I blame 2legs for feeling a bit iffy about dried cassia bark in curries.

Really? Its a bit like sticking a bay leaf, or cinnamon stick into it... the casia bark is quite like cinnamon (same plant/tree family), but a little less 'up front' flavour wise, so more subtle... I take it out once its cooked, though I'm sure in takeaway maddras curry, the little bits in that are casia bark as far as I know... and I've eaten tons of them with no ill affects
