urch I disagree with you about something called bog standard french brie. there is an incredible variety of French bries. In fact I can only assume you are referring to some cheap version found in a supermarket in the UK. I get all different sorts from a local specialist cheese shop; similar to the bries available in France. A ripe, melting good quality, such as a Normanndy type Brie, is a joy almost sexual in nature. And the smell?......

Somerset Brie, like New Zealand/Australian/South African Cheddar, is a total contradiction in terms.

yes, I'm afraid redpeckham, i am guilty as charged for buying my french brie from a supermarket. but as our local lovely deli shut before i could sample their full range of marvellous cheeses, you will have to forgive me. I also miss their lovely made to order panini's, but thats another story.

Good on you urch for admiting it! I do encourage you to try a brie which is already nicely melting. I find most of the ones in the supermarket are far too young, and are kept to cool I think. When I do buy from the supermarket I usually keep it for around a week at least, at room temperature before I'll touch it.

Too many supermarket brie's are stored and displayed to quickly, the rind is either too hard or sticky and most are overripe, any where you can see a sweat in them avoid, never buy a pre-packed brie, always buy it cut from the whole cheese

I did once try a very nice Edam once. It was totally unlike the bland supermarket variety. But then it was a farm produced organic version bought in a market in Edam, so one was always going to expect better grom it.

BTW is that red stuff all over Edam, really plastic? As a child it was always my favourite bit I presume at some point in the past, before plastic was invented, it must have been something else!

Yes you're right, wax! Thats why if you chewed and chewed it, you could make all funny shapes with it as it started to go soft. And it got all stuck in your teeth.
Sorry, that has absolutely nothing to do with cheese appreciation but has more to do with the many pointless things I did as a child. But that's childhood for you.
After previous posts about halloumi, I bought some today and intend to have some fried for my tea. I'm going to follow Master Bs suggestion and coat the slices in flour first to maximise the brown crunchiness of the outside.

I can report back that fried halloumi done this way is very I'm pleased to say it tasted nearly as good as when my Cypriot friend cooked it!
The paprika is a nice touch!
