I've always been suspicious of clams, myself...

Limburger's not so bad. I draw the line at chevre, though. I've tried it numerous times now, and it's not getting any better. It's too...gamey. That's the only way my palate can describe it.

A brief note on the subject of cheese... Here in America, unpasteurized products are not approved by the FDA, and so some cheeses will always taste a bit inferior.

you can sell select cheeses as unpasteurized but i believe that the fda makes the people who sell the cheeses jump through just about every hoop and print on the cheese a disclaimer that if you eat the cheese you'll probably die. horribly. and smelly.

"See, in Sweden, the major dairy company (Arla) makes what they call Mozzarella and Feta from cow's milk (pasturized cow's milk, even), and I've been arguing again and again that it's nothing like the real thing, not at all, not even close."

I'm surprised they can get away with that, given that both cheese names are supposed to be protected by the EU: http://ec.europa.eu/agriculture/qual/en/1210_en.htm,http://ec.europa.eu/agriculture/qual/en/1141_en.htm. In particular you can't call something made outside Greece "feta" any more than Champagne can come from outside the Champagne region, or Jersey Royal potatoes can be grown outside Jersey.

I can't eat cow's milk cheese, so the issue of inferior feta is not an issue heh heh heh. The issue of eejits bulking 'proper' feta out with cows milk as well as sheep and goat IS an issue.

We used to make our own cheese. Gosh, but it was horrible.

I actually think that the branch of Arla in Denmark (it's a Danish-Swedish milk farmer coop for all it's industrialness) have taken to put Fetininni or such easily recognisable names on their fetas.

I like more and more cheeses (one of the fringe benefits of being in the dairy & cheese world of w**k) - but the blue ones have to be very mild specimens for me to ever enjoy them on my palate. Dixi!

My "En route to work" cup of coffee this morning was called "Shot in the dark". It's a shot of espresso in a cup of very good light roast coffee. The lighter the roast the more caffeine the brew contains. French Roast is yuppie for burnt coffee.

Coffee should be both caffeinated *and* served hot. Can't take it over ice, I just can't.

FDA is not my favorite public agency, that's for sure. Not because I have a problem with the concept of the agency itself, but rather because it spends it's limited resources banning cheeses and certain *cough* herbal *cough* medicines when it could be, I don't know, making sure that drugs are approved based on their safety and effectiveness rather than their profitability?

But, Irv, that would upset the balance of the universe!

I *love* me the chevre. Oh yes. I like strong cheeses. Trader Joe's has a pre-packaged cook-at-home dish of flank steak rolled with blue cheese, and I love it. Of course, I have to finish cleaning my oven first, which I'm just not up to today.

I am not fond of head colds.
