Mmmm, mouth-watering. I love them; unfortunately my fiancé doesn't.

The BN squash has been becoming much more readily available in the last couple of years, in supermarkets anyway, there are even organic ones available now.

As for the article, I think a little more introduction to explain what they look like/ are related to, carbohydrate content (?) would be appropriate. I appreciate this is mainly an article about tasty things to do with one - but if the readers don't know what one is or have the context they may not get the full flavour *hehe... sorry* of the entry.

I shall have a look next time I'm in the supermarket to see if it states anything on the label - I know they're high in fibre and by the colour probably have loads of vitamins. I guess carbs are less critical, this obsession on carb watching for dietary purpose is just a current fad - I hope.

If you pressure-cooker them, they are sweeter and moister without the addition of any sugars or butter (they are commonly cooked with brown sugar and nutmeg in the US of A).

The seeds can be brined and then roasted, much like pumpkin seeds can. They taste similar, but do have flavor undertones with sweet tang and a pithiness similar to unripe hachiya persimmon (but not anywhere near so acrid).

Yes, nice entry smiley - biggrin

Butternut Squash Seeds smiley - drool - in my experience much tastier than standard pumpkin seeds, which appear to have a more fibrous shell (which on following the instructions below will provide a nutty snack but one which is marred by the impression that you are chewing cardboard smiley - yuk)

All they need is to have the soft pith rinsed off, then tossed in a medium-hot frying pan with a teaspoon of oil until they start making popping noises, turned onto a piece of kitchen towel to soak up any excess oil then sprinkled with a little salt. These make a further nice addition to sprinkle on the top of a squash soup.

Personally I like squash roasted in chunks with other vegetables (courgette, onion, fennel, aubergine, tomato), then served with goats cheese crumbled on top.
