An inexhaustible subject. Can anyone tell me where in England you can buy pig's caul, the lacy stuff that the French wrap around sausage meat and which serves both as skin and fatty lubricant? I've not plucked up courage yet to purchase the 'Pig's womb' discovered in a freezer in Manchester's Chinatown, which I suspect may be caul. Or is caul something like tripe and sheeps' heads that all go to the pet-food factory nowadays?

I would not bother with the womb. Caul fat is found around pigs kidneys. You often see caul wrapped around a faggot, gives it a nice string vest effect.
