According to one web site, you can add vermouth and oregano to chicken before baking it, as a sort of marinade. However, vermouth can also be added (along with olives, lemon juice, rosemary, etc.) to roast pork. Lamb and crab are also supposed to taste good wyhen cooked with vermouth.

Wikipedia tries to clarify the matter, but only makes it seem more complicated. It says that not all French vermouths are white. Italian vermouths tend to be red.

I saw that, too, Pierce. smiley - ok Vermouth seems to be like brandy or sherry in that it starts as a recognable type of wine, and then somebody does stuff to it to make it something else.

Dear Pierce the Pirate,

Thank you for that wonderful lead on vermouth. I knew it was a fortified wine, and we always had the three kinds of vermouth, sweet(dark),dry(yellow) and Noilly Prat.

My late husband used to make the most potent martinis with gin and a "whiff" of noilly Prat. I could not drink them

Which reminds me about a visit to the Grand Canyon.

WE had lunch at a restaurant there and my spouse gave me a margharita. I absolutely loved it and asked for another Unfortunately he ordered it for me.

Talk about being legless 0 A man from the tourist bus had to help my husband balance me and I absolutely lurched back to the bus, balanced between them

What dissolute wonderfully happy days.
Ah well, I have marvellous memories that is for sure, and this site brings so many of them back.

Dear Paul,

Vermouth is an aperitif and your can drink it in any number of ways. As it is only wine which is"seasoned" with various herbs and spices it is definitely very good for you.
You can also use it, as you suggest, for various culinary purposes.
They must have it in the USA. It does not have a very high alcholic content.
Are you going on holiday somewhere? I have a feeling that you are.

It is a great pleasure to be able to bring back fond memories from long ago

As for wine that is changed you should also try madeira if you haven't yet, paul. It has been neglected for years but I believe it is having a renaissance now

Basically it is wine (from the island Madeira in the Atlantic Ocean) that is heated and shaken for some time smiley - cheers
