i'll have some myself, even if i should avoid salmon, tuna and herring and a number of others
in order to live long and good i should follow a number of different diets. one against gout, another against cholesterol and so on and so forth
but if i followed all these diets i should practically never eat anything - and only drink water - and what kind of life would that be? long maybe, but not good

Same here. I have diabetes, thus no carbs. A morbidly increased triglyceride level (a hereditary disease), thus no fat. Only one kidney left due to cancer, thus no protein.
So if I pay attention to all that, it's only water for me...

I don't have diabetes, but if I ate the way I would like to, eventually (say, in ten years) I would start to have it. Therefore, there are modest limitations on the carbs I can eat. Or should eat.
Yarreau, I also have to battle high cholesterol and triglycerides, for genetic reasons. Not to worry, I eat rather a lot of nuts, which are predominantly monounsaturated and plentiful in resrevatrol (the "French paradox" substance that dark grapes are famous for, but is also plentiful in peanuts). As for protein, you and I are lucky that the body is ingenious in converting its amino acids into whatever forms it needs.
I try to go heavy on foods that come to my plate in the way nature provided them, minus the dirt they grew in . Cooking and/or mashing are allowed, as are drying (prunes, raisins, etc.) and grinding grains to make flour. Donuts and ice cream violate too many of these guidelines. Tofu is also out, not that I miss it. Hamburg and ground poultry are a stretch, but I allow them.
I threw away all my table sugar years ago. Honey would be allowable, but so far I've managed without it. Technically, the milk I drink should be whole milk, but I drink skim instead because of the cholesterol.
