The worst thing about haloumi is the squeak. I honestly can't remember what it tastes like - I just remember the squeak.

I've only had haloumi fried. I wouldn't say I found it disgusting, but a bit insipid...it's not something I'd crave, but it was ok.

But it's a wonderful squeak!
I should try honey with sharper cheeses. I've only ever mixed it with cheddar.

Fresh brie is a treat.
I sprinkle a four-cheese Mexican blend over chili.
