You could use fillet of mink to make a sausage roll. Or ermine if you were particularly posh.

Just sausage meat... and black pepper... and some cheese, and diced bacon, hmmm... actually... not sure... maybe... depends what the sausage meat is like... 
Now if only I could find soemthing to do with all this spare flour butter and eggs I seem to have laying about... I just can't think of anything... 
Don't have fancy a pie about now though...
