I've only just now discovered that all those Indian dishes with potatoes served with rice or naan or chappatis are weird. Who knew? Maybe we should tell the restaurants.

It's not unknown. But did you know that 'So Long, Frank Lloyd Wright' was a coded message that Art Garfunkel was out of the band? Simon didn't tell him until after they'd finished the album...and Garfunkel only found out about the song in an interview twenty years later.

For what it's worth, I'm making lentil-ham-potato stew for lunch today. I'll save the lentil-mushroom lasagna for another time, right after I buy a new bottle of nutmeg, so as to have fresh nutmeg on hand...

I had wondered what grene lentils might be. Then I saw a recipe for green lentils, and the picture looked just like the lentils I always have on hand. That part is not going to be a problem. Google has a *lot* of recipes for mushroom lentil lasagna. My next step is to look for whole wheat lasagna at the nearest whole-food store.

Ooh, no. Don't use whole wheat. Far to hippy and stodgy. The Italians do make one or two whole wheat pastas - but not many.
And no tomatoes!!!

"pasta" translates as "dough", and "whole wheat" just means there is no egg yolk in it, so it´s nicer with fish.Just don´t be as stupid as to buy your spaghetti in a "greener-than-thou" boutique.

"Hippy and stodgy" is an oxymoron if there ever was one. I was criticized by an endoscopy clinician for not getting enough fiber. All my grains are whole grains. I don't peel my potatoes. I eat bran for cereal. But no one else has to eat at my table if they don't want to.
When I searched on Google for a lentil-mushroom lasagna recipe, every one that I saw called for tomatoes in one form or another. But I haven't decided yet how to proceed, except that I just bought the whole wheat lasagna, and it will not go to waste.

You're quite correct on never peeling potatoes. Even if mashed - nothing tat a few passes with a sharp knife won't solve.
But do try my lasagne as listed. The ones on teh interwebs with tomatoes are most likely delicious. Mine without is...different. And there's plenty enough fibre in the lentils to please any nutritionist.

In fairness, I probably will try it as listed. I very rarely make lasagna, because it takes a lot of work, and gets tricky in terms of getting amounts right -- don't want to have leftover ingredients...

Walnuts in with the spinach is good.
