Eggs are a pretty obvious fertility symbol, I doubt they began with Christians but were simply the most fitting choice. Chocolate 'cos it's nice, and can be sold. There used to be all manner of 'chocolate simulacra' besides hares/bunnies (lions, fish etc.)
I don't take the view that the early Christians 'hijacked' pagan festivals; however they based theirs on dates traditionally celebrated for various reasons, usually mundane agricultural ones. Which, sadly, seems to be all the famous pre-Christian pagan religions were. (Ah, but we've come a long way...)
They did make Easter fixed (in Britain at least) for a while, at least until the Pope found out about it. I think it was at the behest of confectioners but agreed on by most people.

Why do we have easter eggs?;
Because it allows the firms that make choc to sell you less of it, in a pretty box, for more.
