OK everybody, new thread tomorrow!

Just saw a documentary on Copenhagen restaurant Noma - 2 michelin stars & named the 10th best restaurant in the world.

A working environmet where you're part of a very close, very sharp and very passionate team - and where you're on the cutting and creating edge of things within your chosen profession.

But also an environment wher the last two percent - from 98% to 100% - absolutely is crucial. Where there is absolutely no room for error. And where you work 10-12-16 hour days. Where there are 40 guests who may have booked 3 months in advance to get a table and pay through the nose to be there. A lot of pressure...

Fascinating. Worth giving some thought. Though, to be honest, I don't know if the inspiration from such passion or the relief not to be under that sort of pressure is most on my mind...

We've got Labor Day next weekend.

I'm just revising one of my chapters. Next weekend is my last free weekend. Then I'm in lockdown mode until December.
