What is the most counterintuitive thing you know to be true?

I knew the word meniscus, but can't rid myself of the overwhelming feeling that it should be a part of female anatomy rather than something to do with water levels.

That must be my subconscious aversion to the phrase

We can only directly perceive the past, as it takes a certain amount of time for signals to reach the brain and be processed..and of course with vision and hearing, they are subject to the speed of light and of sound.

I also feel that is an odd one, that we can never percieve the present. The fact that all motion is relative, without any absolute frame of reference, is rather counterintuitive for me.

That an identicle bread dough can make wildly differnt breads, just based on alterations of cooking conditions, and, even moreso, slight variations in teh amount of water in the dough And, the fact the world, life, all seems so real, yet there isn't any proof to say it is real...

Cream is less dense than milk. You know it's true because cream floats on milk. But it's thick and heavy and gloppy. How can it be less dense?

The less I eat, the more I put on weight. Seems counterintuitive, unless someone is coming and feeding me while I'm asleep.

Whomever discovered fermentation was a good thing took a giant leap as far as I'm concerned.
No vanilla extract, no chocolate, no tea, no beer, no spirits, no vinegar, no sourdough, no yoghurt, no cheese, no antibiotics...is there anything magical we eat or drink that hasn't been through something (natural, yes, but...) disgusting to get here?
