Cooking a starter that really needs a Raita for the olds on Friday (who have recently jetted into blighty) and I am cooking a dish that really needs a raita for starter.
My step mum is Dairy intolerant so I cant use Yoghurt and wondered if people could recommend an alternative.

Soya yoghurt.
Silken tofu with a little WW vinegar added.
Soak cashew nuts in water for a few hours and blitz them with the water.
Add the usual lemon juice, garlic, cucumber, mint etc to the above - you'll never get quite the same taste as dairy yoghurt but any is a decent alternative.

I love the Alpro soy yoghurt - I find it a bit sweeter than dairy stuff though - but with the right seasoning it'd be fine.

Zizz u some dessicated coconut (or as we call it in or house, 'desecrated') with some water and a few mint leaves.
You can also add coriander and lime if you want more of a chutney thing - and green chilli if you want it hot.

I decided against Raita in the end. But I used Soy cream for the dessert. It was dark and dense chilli chocolate mousse with lime palm sugar and Thai sweet basil cream.
Went ok, though I now know you cannot whip Soy cream which was a bit of a pain!

Palm sugar appears to be the ingredient du jour. I must get some.

It really was. I made it almost savoury. Didn't put any sugar in the egg whites and used 85% cocoa solid chocolate. So it was hot and bitter and chocolatey.
The sweetness came form the cream so it was a fab combo. will be doing it again for sure.
