I'm a sophomore in college majoring in mathematics, and I'm also really interested in linguistics. My school requires us to take a few classes in an "approved related field" in addition to the major requirements in order to graduate, and I'm would like to use linguistics as the related field. A quick Google search confirmed that it's a fairly common pair of subjects for people to concentrate on, but I can't find anything about what you would do with it.
Does anyone know what sort of careers are available that would use both linguistics and mathematics?

Most jobs don't require a specific degree. It's probably not worth fussing about. The hard/soft (numerate/literate) combination should have you well covered for all sorts of careers.

I'll echo intelligence work. The ability to solve mathematical and/or linguistic puzzles is a definite advantage in that field. Not that I'd know...

Something in finance? Ok the maths isn't that complicated, beyond adding, subtracting, and understanding or inventing statistics, but writing reports and explaining stuff to non-mathsy people is a useful skill. Financial journalism? You could be responsible for the next Black Monday!

I did Arabic in my first year of Filology. I quit it because the grammar was very difficult.
There was a classmate who was doing his doctorate in Maths in my class of arabic. He told me that the Arabic grammar was based in Maths. The way it combines... Sort of that, I donĀ“t remember what aspect of Maths he was referring to. Sorry. Surely it has a sound basis because Maths is essential in a lot of aspects of Islamic culture.
I would say that Maths is a language. It is a communicative system. It has symbols, reference, channel... it conveys messages...
Maths simplifies reality to help us understand it...

Designing computer-human interfaces that are more intuitive.
Decoding math and science for the general public, aka science journalism.
Technical writing.
In general, nearly everything. I don't know of a job out here in Geekdom that doesn't require reports, presentations or some other type of clear communication.
