I'm not sure about it being "better" than the original, but it is really good. Beck's cover of 'Diamond Dogs' (on the Moulin Rouge ST & produced by Timbaland) is really, really good.
If you're talking mixing 2 songs together (sugababes et al.) then you really need to try Soulwax. Get the '2 Many DJs' album, its amazing (you'd never know they're a rock band!)
Dreadlock Holiday and Independent Women, they *so* sound better together than they look!

Somewhere out there there's a mix of the vocals from Eminem's "Without Me" over the instrumental section of Dexys Midnight Runners' "Come On Eileen". Beat that!

Actually, thinking about it, I'm sure Utah Saints have already done this. I just heard 'Dreams' (the original), which brought tears to my eyes - something the cover could never do. And well, that sums this thread up really.
