I think I'll make curried fried plantains with saffron rice and mango salsa. My S.O. won't be home for dinner tonight, so nothing fancy!
Since I'm still waiting for my lunch to arrive, just *thinking* about the evening meal is making my stomach rumble!

Significant Other, I guess.
I'm without SO and my children tonight, so it's a ready made lasagne that's almost ready in the oven....

Sorry, "significant other". I think using the term "boyfriend" at my age sounds kind of silly. Or maybe I just have age issues.

It is looking like steak, mushrooms, red onions, aubergine(eggplant for all you none Brits) in tomatoes and red wine and garlic and garlic and garlic(not sure how I am going to cook it all yet) with polenta(the main root of why I have just bought the other stuff). Polenta have not had to for ages.

If this recipe sounds dangerously spicy, do not panic - it's not at all hot. The 'Vesuvio' part of the name comes from the mixture of tomato sauce and mozzarella, which gives the impression of molten lava. I love potatoes and will use gnocchi in place of any pasta, given half a chance.

I ate about an hour ago. Did the rice dish I do with basmati rice, diced chicken breast, tons of mushrooms, onion, celery, garlic chicken stock, had it with salad with a balsmic vinigar dressing on the salad, oh, yeh, juice of a whole lemon and ground cumin and fresh ground black pepper goes into the rice thing made too much of it but ate it all which I now regret

It was yummy. Independent assessor gave it 9/10.
Polenta was said to be a little bland. However, I like the mild/subtle taste of it and allow the other flavours of the sauce shine through.

Had the plantians, stir-fried in olive oil, garlic, and grated ginger. Also took the suggestion of another h2 researcher and had some diced pineapple sprinkled with chili powder, cumin, and sea salt. Yummo!
I love vesuvio potatoes, and gnocchi, too!

Not sure yet, but it'l involve mushrooms porbalby probably not too much food either as I've stuffed myself for lunch on free food from the bakery they gave me as they were getting ready to close
