Oh, the endless series from the past and present... never concluded... hanging in eternity.
What of Automan or Manimal? Or, a decent conclusion for classic Galactica for that matter? Did Lost in Space ever reach a satisfactory end?
More recently - John Doe (one season), Odyssey 5 (a show with a 5 year plot-line cancelled after the first), Jeremiah (two seasons), Firefly (less than one season), Flash Forward (one season) and Carnivale (mentioned in another thread, great show, but sorely little known).
I always seem to pick the ones that get cancelled... I do the same with comic books.

The two shows I miss most both starred Summer Glau - "Firefly" and "Terminator: The Sarah Connor Chronicles".

So many I forget some... I too watched and enjoyed the Chronicles.

American Gothic- what a great show. No idea why it was cancelled.
