For me this would be Babylon 5 which was an outstanding series. I was also fond of Star Trek TNG and Deep Space Nine. More recently I'm hoping that there will be another series of Lark Rise to Candleford, which I also very much enjoy watching.

Definitely Babylon 5 - just as it was beginning to get good at the end of series 5, and with Crusade they had introduced the characters and were settling in to the storyline, when sudden cancellation.
I also was getting quite into Firefly, FlashForward and Pushing Daisies when they were cancelled.
I still wonder what the plan to resolve everyone dying at the end of series 4 of Blakes' 7 for the start of series 5 would have been, too...

I think you're right. It really is these narrative series that leave us high and dry when they're unduly whipped off our screens without an ending. You invest in these characters and then they're gone.
We have to confess we've not seen Last of the Summer Wine for a while, but it would be a shame if it was denied an hour-long celebratory final episode, a la M*A*S*H. Except hopefully without anyone going blind like Radar.
