A Conversation for Scottish Music - "Loch Lomond" is Not the Only Fruit

I am curious to find hear what an authetic piece of soulful "Tartan music" sounds like . I grew up in Scotland and remember slowly turning the radio dial and being appalled by the warbly screeching noises pouring through the speakers like runny porridge. Lots of wonderful music has come from Scotland or been influenced by Scottish music. Personally however, I have never heard a bagpipe that didn't sound like nails scraping down a blackboard.
Perhaps you can clue me in to what I am missing?
