Sweet Home Alabama by Lynyrd Skynyrd is great because you only need to be able to play D C and G, over and over and over again.
It's also pretty good because once you have the rythmn you can start trying a bit of picking to get it sounding more like the original.
Also fairly easy to jam to, what with Lynyrd Skynyrd being a three guitar band, it's fairly simple to add people and still sound good.

The number of songs that simply use A, D, and E with the occasional variation are many...
Like "Tide is High" by Blondie - A, D, E, repeat.
Or 'Blitzkrieg Bop' by the Ramones - usually played, however, as power chords rather than open chords. Regardless, A, D, E.
Or, for those who know C, 'Lola' by the Kinks - E, A, D, and a C at the 'Lo-lo-lo-lo-Lola' part of the chorus.

I think this is something that Rich definitely hopes to finish at some point, but what with being busy and a bit of a lack of input I think it's on a back burner right now
