Butternut Squash Chili
1 med. butternut squash, cut into 1" chunks
3 T olive oil
1 can hominy
1 onion, finely chopped
5 cloves garlic, minced
1 green bell pepper, finely chopped
1-5 jalapeño peppers, finely chopped (to taste...5 is pretty hot)
1 tablespoon cumin
salt
water to cover
sauté squash, onion, garlic, green peppers and jalapeños in olive oil until onions are soft. add cumin, add water until squash is barely covered. Put a lid on it and let it go for about an hour. Open up, stir, add hominy and heat through. Puree half, add back in, and serve with sour cream.

What is hominy? I've never heard of it, so if you tell us what it is we might be able to think of a UK equivalent.
Sounds good though Can't wait for the end of today when I can start eating things I like the sound of! Methinks something squashy is on the cards, especially as I have about 2/3 of one sitting in the fridge right now...

um, darn, I don't know what they heck you'd call it. It's corn that's been degermed and the husk is taken off, and then it's dried and then re-hydrated...also known as posole?
