well in the 12th century belgium didn't exist, it was invented as a playground for the rich, to fight each other.
are all the others 'invented'
frogs were just a veriety of toad
baggettes are just bread
monks were friars
ginger was red haired
chicken was a fowl
etc.

Belgium didn't exist - indeed, a bit immaterial to the question, however: under The Holy Roman Empire this territory was The Principality of Stavelot-Malmedy on the Meuse River. Later Roger moves to the centre of what we know recognise as Germany.
You could justifiably have this set in German, it dates from around this period. Did he write it all down while in Belgium or Germany, can't be certain. It doesn't really matter all that much.
Baguettes are bread.
Ginger is red-haired
The qualifications are welcomed the distinction, however is not a matter of their fabrication or invention.

Yes. Let us assume chickens can't talk and the ginger midget was also illiterate.

Is it a physic like Gerald's or Culpeper's herbal?
Or a bestiary.
Such as mandrake, or mandragora, could not be pulled from the ground because it screamed. The shape of the root resembling the human form. It was also believed to spring up where executions occured, leading to a belief it came from the blood of the executed and was often used in herbals or spells, both for good or ill.
This from my version of Culpeper (it is not dated but printed by Foulsham, purchased 20 years ago:.
It is governed by mercury. The fruit has been accounted poisonous, but without cause. The leaves are cooling, and are used for ointments and other external applications. The fresh root operates very powerfully as an emetic and purgative, so that few constitutions can bear it. The bark of the root, dried, acts as a rough emetic. The root formerly was supposed to have the human form, but it really resembles a carrot or turnip.
According to my book, he lived from 1616 - 1654, so was 38 when he died, but was prodigious.
I can't reach my Gerald's, which I think may predate Culpeper, but not to the 1100's...

No it isn't but have a DGI+1 for encouragement, for its genesis is similar.

...a monk called "Roger" ...
Given that you said called and not named, are we to assume that 'Roger' is not his actual name but more of an epithet?
