I've found that if you keep most cheeses in the fridge long enough they turn into an interesting green furry substance that probably doesn't melt. I certainly wouldn't recommend it for an omelette sandwich, or any other kind of sandwich for that matter.

It would probably be illegal (and almost certainly immoral) to attempt to melt that interesting green furry thing, as by that time it can be afforded rights under the Geneva Convention as a sentient being.

Halloumi cheese doesn't melt. You can fry it (yum) or BBQ it. But, in my experience, all cheeses melt. Some cheeses more melty than others.

It's Greek. That's all I know. That and it tastes great. And it doesn't melt.
Most Delis or cheese shops will have it if you want to try it.

Also Feta cheese doesnt melt, also Greek I think..
Which leads me to think that the Greeks are missing out on the wonders of cheese melted over toast....

Anyway, to get back to your original question. Some cheese melts much much better than others. So for a warm sandwich I would recommend something like: danish blue, cheddar, brie, camembert, mozarella, Venezuelan Beaver cheese..... but not: Comté, Wensleydale (although, to be fair it is the absloutely best cheese ever in the history of anything, it does improve the flavour of everything), feta, halloumi, Japanese Sage Derby, Mainzer hartkaese (yeuch, only to be used for erasing pencilled in comments which you made about the boss on someone elses meeting notes). That is what I meant by any chese that will melt.
