I dont' make my omelette sandwiches using quite this method (I wouldn't have thought to put cheese on the bread first, and I haven't ever put mushrooms and peas in the same omelette before, although I have put them in omelettes on separate occasions) but they are one of my favourite dishes and my parents think I'm just weird!

Fascinating what is in the Guide

I used to just make a plain, one-egg sandwich, but over the years I've embellished it a lot. With something like brie, if you put that on the bread, then put the hot omlette on top and eat it after a minute or two it's just... divine.

Ooo - I just happened to buy a bit of brie today, and I have the omelette ingredients and the bread... I shall try that this week

I liked it indeed - a flavour explosion

The white part of the brie was a bit too strong flavoured, but the creamy part melted to perfection and complemented the flavour of the egg just right

Every time I made an omelette before, I never thought to heat the peas before adding the eggs so I did that, and the texture and taste was much superior
