It sounds intriguing smiley - bigeyes Sort of a Mexican sweet curry is how I read it. I confess I have never seen half the fresh or dried chilis described in my local shops. Plantains would be tricky too. Certainly would make a fair number of portions. I may wait until I can taste it in Mexico - do restaurants serve a reasonable version of it?

Yes, many restaurants do, and have a wonderful journey to Mexico. smiley - smiley

Bananas, though sweeter, make passable plantains. In your local shops what chillies are available? During the editing process, I learned that ingredients have different names regionally. Perhaps you have similar chillies that can be substituted?

There is only one thing worse than being Gosho, and that is not being Gosho

I had never heard of most of the different kinds of chilli or had any idea that so many exist until I moved from London to Texas. Chipotle? Ancho? Poblano? They're unknown to most UK residents (unless they're well-versed in Mexican or Tex-Mex cooking), whose chilli knowledge will run about as far as jalepeƱo and habanero.

I love mole and it choose it from the menu more often than not when I visit the Mexican restaurants around Austin, and there are many. It's not really like a sweet curry - the kind of heat (and obviously the flavour) you get from Mexican and Indian dishes is very different, and very difficult to describe.

All chillies came from South America originally, even though they are now cultivated around the world. I only know chillies by their Spanish names, but I'd like to help you find local substitute chillies if at all possible. What chillies are available where you are?

I've got some great news for you. You don't have to move to get hold of the ingredients to Make Mexican Mole. I found a great site that sells the chiles needed to make Mole & even ready made Mole sauces.

I've tried the ready made sauces and as they are made in Mexico are considered to be the real deal. My mother in law from Guadalajara makes mole on special occasions but I didn't have the heart to tell her that the La Costena versions were just as good.

Anyway the site is www.mexgrocer.co.uk they've also got some pretty tasty looking sauces, if I had all the money in the world I would buy one of each product they have. In fact I'm going there now to buy something. smiley - biggrin
