Sorry... no room for anyone else in any kitchen I am cooking in. I am a hurricane.
Made a really delish meal tonight!
Black pudding, and roast potatoes with mushrooms and zuccinni (courgette?).
I par-cooked the potatoes. Meanwhile, I tossed mushrooms in olive oil, garlic, thyme, pepper, and a little Dijon mustard (actually, if you do this an hour or so before you start cooking, all the better). Just before the potatoes were tender, I threw in the zuccinni (cut into thick rounds, along with the thyme stems. At this point, I put an oiled baking pan into the oven at 425 (a heavy iron skillet works very well, too) to heat.
Remove the potatoes from the heat and drain when they are still hard in the centre. Toss the potatoes vigorously until the outsides start to crumble slightly.
I put the mushrooms in the pot with the potatoes and stir.
When the pan in the oven is piping hot, I throw the whole lot in and roast until crispy (broil to get the top browned).
Man, oh, man.... it was fabulous. And it tasted really good with black pudding.
