It was reactions to fish that previously hadn't been a problem that made me try not eating any animal.

I had a bad reaction to a dinner and decided to no longer eat any fish and then, any animal, if I could help it.

My mum went vegetarian for a while, she doesn't like meat that much so she tried it for a while, but went back to eating meat about 18 months later

It's been since Feb. 2004 for me. I find the b-12 supplement helps a lot.

Thank you. I feel better. Some of my health issues have eased up a bit. That would be things like sinus problems and inflammation related things.
After nine years of working in the kitchen of a natural food store that specializes in offering vegetarian foods, cooking without meat isn't a problem.

There are some lovely vegitarian meals out there. Do you eat the psudo meat Linda McCartney stuff?

I haven't run across the Linda Mc Cartney brand of dinners. We have had her cookbooks at our store. Saw Paul and Linda in 1993 in New Orleans at the Superdome. At least,I think that was 1993.
I will eat tofu, tempeh, boca burgers, a couple of quorn products, and some of these http://www.yvesveggie.com/products.php?page=1. These are good too: http://www.amys.com/products/category_view.php?prod_category=4 Most of the time, I cook things from scratch, like black bean chili or spaghetti sauce, even vegetable gumbo, when it's actually cold here.

That cheese lasagne looks really nice , the Soya mince we get at work's nice too, it makes a decent Chilli and Bolognaise too

Some 'meat substitutes' are ok, but there are a few I can't digest very well. I use the quorn grounds to make tacos or add them to spaghetti or even omelettes.
Grilled aubergines make a nice lasagna filling along with spinach. Have you ever made a white lasagna?

A white or cream sauce, white cheeses (mozzarella, ricotta) and vegetables.

Anyhoo- I made a really good, really simple lasagne recipe last night that you could probably substitute eggplant and mushrooms for the ground beef. I think that's what I'll do next time.
It's so easy! Instead of cooking the noodles beforehand, you double the volume of the sauce with water and spread a layer of that down on the bottom of the pan. Then you just layer it as normal. It takes about an hour to prepare and cook, compared to I don't even know how long for normal lasagne.

We get lasagne sheets that you don't need to cook, you just layer it on au natural and it cooks with the dish.
