Use by dates on dates

Why do packets of dried dates often have really silly use-by dates like; "consume within 1 week of opening", when the bleedin' things last forever?
I've never, ever observed dates to go off; even after years in a cupboard (not even a fridge), they look and taste exactly the same as when the pack was opened.
I don't know what the syrupy goo is that they are coated in, but I sometimes wonder if it could be used on any living organism to give it eternal life smiley - erm.
Seriously though, has anyone ever had their dates go of, and how long did it take?
