I took Renaissance French literature in college. The professor called our attention to the castles along the Loire. I imagine that a boat trip up or down the Loire, with stops at various towns/ castles would be charming. In the Summer, of course.....

When I toured central Italy, we didn't have enough time in Rome. I'd like to go back and catch some of what I missed. I've also enjoyed Tim Parks's books about Verona. It would be fun to see some of the places he describes.

I toured a couple of the Baltic nations a few years ago, followed by a few days in Saint Petersburg. I feel that I saw enough of the latter -- the whole place is a museum dreamed up by a Tsar who apparently needed to get a life, but got a custom-designed city instead smiley - erm. I liked Tallinn, the capital of Estonia. No one would ever list it among the ten greatest attractions of Europe, but to me it was perfectly charming.
