All too often I am told that some particular course of action I am embarking on is probably the thin end of the wedge
What is this wedge and does anyone actually know what's at the thick end?

The basic meaning is that you are regarding the task as fairly simple at first glance. The person who is saying that it is the thin edge of the wedge is wiser, and knows that a lot more work than you are aware of is involved...........
