Why do soft things left out go hard (e.g. bread) but hard things go soft (e.g. biscuits).
Is this just the fundamental perversity of the universe or is there some well-understood physical principle at work which just happens to have passed me by...?

It's a matter of moisture from the air seeping into the hard thing or out of the soft thing. I think.

I'm more inclined to think of it as an example of the fundamental perversity of nature. Things degenerate into whichever state is most undesirable (soft biscuits, hard bread, soft apples etc).
