A Conversation for Scrambled Eggs
The Well Done Scramble

I know I am in the minority here, however, I would like to include my recipie for PROPERLY cooked scrambled eggs.
3 eggs per person (I like eggs)
1/8 tsp sea salt per person
dash of pepper per person
2 tablespoons of butter per person (or more)
1. Carefuly crack each egg into a small bowl
2. Each egg should be placed into the mixing bowl after checking for shell, blood spots, etc..
3. Briskly whisk the eggs until a lovely lemon colour adding the salt and pepper half way through
4. In a heavy skillet (a well seasoned iron skillet performs the best), on medium heat, place all of the butter.
5. When butter is just beginning to brown, add egg
6. DO NOT STIR until the bottom has set lightly.
7. Lift the edges letting wet egg travel to the bottom.
8. Repeat twice.
9. Now begin to break up the egg into bite sized pieces.
10. Stir and saute until all edges have a crisp brown coating.
11. Sereve hot with buttered toast, slice of tomato, and your favorite breakfast meat.

Where about would this assessment of proper meet with general nodding and murmurs of agreement? 'Proper', after all, means different things to different people. Scrabbled eggs with brown crispy edges would raise as many eyebrows where I live as the idea of proper dress including a bone through the nose.

Well, I did say I would understand if no one else thought my "proper" was. I am quite aware how my approch elicits some reserve. I prefer my eggs that way, so for me, this is proper. I simply can't take those slimy wet things other people refer to as scrambled eggs seriously. Bleckhh!
