"Norman Bates' mother?"
No, for you are not the mother of more than 1 Norman Bate.
It's a style thing. Firstly, the plural that pheloxi refers to is wrong.
The only place the pluralisation he mentions could occur is with 'bates'.
Now, if one takes his convention of proper nouns ending in s being given just an apostrphe of possession with no 's' then it is Norman Bates who is plural, not his (their) mother(s).
As correctly identified, though, a plural does not take the s in the 's of possession.
However, Norman Bates is not plural, he is singular (quite singular the old fashioned amounst us might say). Therefore, by the rules, he must take the 's in full to indicate possession.
Truth be told, this is a common disagreement. Many people just apply the ' on its own to any word ending in s that needs to show possession.
But there is an equal group who point out that Bates is singular and therefore must take the complete 's.
Indeed, in 'Elements of Style' by William Strunk, jr from 1918, using the 's with proper nouns ending in s is his No. 1 rule!
Personally, I change which I use depending on how I'm feeling.
No one would want to have to write 'The Joneses's house.' or even pronounce it!
Sorry for the serious diversion
Have a and calm down and relax.
