I've been playing with them in the R&D space (or in RL, what is commonly known as 'my lab').

Just because we're knights, doesn't necessitate the use of primitive materials and technologies. Or you could consider it a form of magic, thus adhering to Clarke's law - 'Any sufficiently advanced technology will appear to the more primitive as magic'.
