This is a really neat recipe that a friend gave me. It's easy to make. It's delicious and yeast-free! Try it!

This entry looks great to me! As far as I'm concerned, it's basically ready to go into the Edited Guide right now. The only thing that this entry leaves me wondering is 'what does this taste/feel like'? Is it a mealy bread, or softer? Does it have a rich flavour, or is it best in conjunction with other materials? You may not want to put the answers in the entry, but I'm curious (so at least post and tell me )

As it's not a yeasted bread, it can be fairly heavy expecially if made with wholemeal bread, but I really like the texture. I made it with spelt flour just before submitting it to see what that was like and that was fairly smooth. Using the same amount of liquid, the dough was a bit slacker. Both my son and I really liked it. Spelt flour is better for people with wheat intolerances.
I could put a footnote about spelt bread, however I tend to think that most people with wheat intolerance would know this.

On second thoughts, I thought it would be better to add the footnote, plus another on the importance of sifting the flour.

How long does this bread keep?
Can you freeze it?
Spelt flour is a new one on me. Is this something only available in the US?

Hi Amy!
The bread seems to keep happily for several days. I keep mine in the fridge. I haven't frozen it yet, but I see no reason why it shouldn't be frozen. It tends to disappear fairly quickly in my house.
As for spelt flour, it's fairly readily available here in the UK. I bought organic spelt at a normal supermarket. You can also buy is at health food shops. My packet has a recipe on it for Roman Army Bread. My packet says that spelt (tricam speltum) is an ancient relative of modern common wheat which was commonly grown by the Romans. Perhaps I should include that in the footnote.

PS: Just in case you're wondering, Roman Army Bread contains yeast, honey and olive oil as well as spelt flour and warm water.
