Sunny side up, or Easy Over?

Good entry TC.
Slight typo, imho,
>>Having said that, it is recommendable to pre-heat the pan,<<
Having said that, it is recommended to pre-heat the pan,
I understood 'Sunny side' up to mean that the whiteis cooked, but the yolk isn't, so that the toast can be dipped in it... my preferred option, whereas 'Easy Over' is for those who don't like raw so the is coaxed over to cook the other side of the yolk.
I also understood, maybe erroneously, that 'filigree' is due to the egg being old. Shouldn't happen with fresh eggs, I believe.
Omelettes next? Please? As it is something I am useless at!!!
And not an in the house, so I can't try the entry out!
