If you divide the sequence up into pairs, then each pair conatins one member of a category and then a smaller member of that category... (it's lame, I know, but I'm trying here)
Like cats & dogs can go in a similar category (household pets or carnivorous mammals), mice & moles (I think moles are smaller.... perhaps it depends on the mouse <grimace&gtsmiley - winkeye, deer and pig both have hooves....

Umm, then using the number-of-letters-in-the-number theory, how about......

um....

that two consonants thing is a good point... otherwise I could say (within the mammal category): Tapir, tahir, tiger, chimp, takin, camel, otter..

Going witht he theory of expanding to another animal, "mouse" would become "titmouse", a type of bird (or "dormouse"). You got me on "mole" though, as I do not right now have access to my Audobon encyclopedia.
Hmm, the next one in that sequence could be.... hm.. I can't seem to beat "ant".. I'm slow today.
