Okay, I will officially smash the champagne bottle across the prow of this thread.
Fondue Pie
This tasty, rich and cheesy treat also works well as a brunch dish. Be sure to make two pies, as they might go fast!
3 large onions, sliced thinly
3 T butter
2 ½ cups grated Gruyere cheese
3 eggs
1/3 cup flour
3/4 cup dry white wine
3/4 cup milk
1/4 t nutmeg
salt and pepper to taste
4 - 5 slices sourdough bread
Preheat oven to 375 degrees Fahrenheit. Sauté onions in the butter until well carmelized, 20 - 30 minutes. In the meantime, grate the cheese. Then butter a 9 x 13 inch casserole dish and arrange the slices of bread neatly on the bottom of it to form a crust. Evenly spread the cheese on top of the bread. Whip together the eggs, flour, wine, milk, nutmeg, salt and pepper until smooth. When the onions are done to your liking, arrange them on top of the Gruyere and then pour the custard over the lot. Bake for 30 minutes until golden brown on top and bubbly. Serve hot. Mmmmmm!

Crockpot Chili
1 pound ground beef
olive oil
1-4 cloves garlic, minced
1/2 onion, roughly chopped
1/2 green bell pepper, minced
1-1/2 T cumin
2 cans peeled tomatoes
1 small can tomato paste
2 cans beans (black, kidney, etc), 1 can rinsed, 1 can not.
Turn crockpot onto high, add olive oil. When oil thins, add onion, garlic, bell pepper and ground beef (in small pieces). Stir until beef begins to brown. Add cumin, stir to distribute. Add tomatoes, tomato paste, and beans. Add a bit of water if necessary. Stir to combine, turn the heat to low, pop the lid on, and walk away for AT LEAST 3 hours (8 is better).

Here is one of Lord C's recipes:
Hot Pepper Casserole
4 or 5 roasted poblano peppers chopped into bite sized pieces
2 lbs. lean ground beef
1 lb. lean ground pork (or sausage, if you prefer)
1 medium onion chopped
1 TBSP chopped garlic
1 can refried beans (we prefer black beans)
1 can rotel chilis and tomatoes
chili powder and cumin to taste
salt and pepper to taste.
Shredded Cheese
Roast peppers on grill. Take out seeds and membranes, cut into pieces about 1 inch square. (You can take off the skin if you want, but we like the smoky flavor it gives the dish.)
Brown ground beef and pork in a bit of olive oil. Add onions and garlic. Cook until tender. Add refried beans, rotel chilis, and seasonings. If mixture seems too dry, put in some beef broth or tomato sauce--your choice.
Remove from heat and stir in some of the cheese.
Pour into 9 by 13 pan and top with more shredded cheese. Bake in 350 degree oven until cheese is bubbly and lightly browned.

Well, here's my casserole for the day! I cribbed the recipe from an episode of Daisy Cooks, so amounts are estimated.
You'll need:
3 cups of cooked chicken (cooked thigh meat works great - just debone and deskin the thighs when cooked)
Tortilla chips
Lots of shredded cheese - your choice of white or cheddar
3 tomatillos
1 bunch cilantro
3 cloves garlic
2 jalapeños
cumin, salt & pepper to taste
Lime juice
Blend chopped, de-papered tomatillos in a mixer, add cilantro, mashed garlic, peppers and spices, and lime juice. Heat on stove until bubbly, and add cooked chicken. Simmer for a few minutes.
In a 9x13 casserole dish, put down a layer of corn chips. Using a slotted spoon, add cooked chicken to cover. Add cheese to cover that. Do all that again. Add a cup or two of the tomatillo sauce to the casserole - not too much, or it'll get too wet. Bake in the oven at 325° for about fifteen minutes, until the cheese is melted and there's a bit of brown on the edges. Serve!

Wonderful sounding recipe. We will try it. We love Mexican food and even Tex Mex. Our son in law is half Mexican so he provides us with authentic family recipes. His hot sauce is "to die for". Here's the kicker.........he likes mine better.
