There are a lot of food types that are seen to be an acquired taste... Anchovies and avocados, olives and marmite. But why? What is it about these foods that, if we keep trying them, will make us eventually grow to love them?

We'd also be interested to know if there's a scientific theory behind this phenomenon. How is a taste acquired? Does anyone actually know?
