Woolly Mammoth

Anyone know how to make soup out of them that will actually taste nice.

In fact anyone know any decent cabbage recipes. I can't stuff every single leaf before it goes off!

I tried googling, and the first hits were all about the cabbage soup diet smiley - erm - but when I read the recipe, it sounded quite smiley - drool

1 head cabbage, shredded or chopped
2 large onions, chopped
16-28 ounces canned tomatoes, chopped
2 green peppers
4 stalks celery
1-2 packages Lipton onion soup mix, or any dry onion soup mix (optional)
black pepper
any fresh herb(s) of your choice, chopped
6 carrots, sliced
1/2 pound green beans, sliced on diagonal
1/2 cup balsamic vinegar (optional)

Put all vegetables in a big pot and cover with water. Bring to a boil, stir in the soup mix (if desired), and boil gently for 10 minutes. Cover, reduce heat, and simmer until all the vegetables are soft. Stir in the black pepper and chopped herbs (saving some for garnish).

Although personally, I'd probably leave out several ingredients (I don't like celery, and I can't stand carrots other than raw).

Mmm - I suppose that might be interesting - I don't particully like any recipe that contains 'soup mix' as a recipe! I think tonight's going to be experimenting with cabbage recipes. If I buy some herbs and tinned tomatos I'll be fine, and I don't have celery - but I could do the rest of the stuff.

Still open to more ideas!

One of my favorite ways to eat cabbage is to slice it thinly <not chop) and then pile it into a cold skillet. Add enough water to start it cooking, salt and pepper, about a teaspoon of sugar and some bacon drippings. You could substitute olive oil or butter. Then I cover it and cook it low, checking to make sure it doesn't burn. I add about a tablespoon of vinegar right before I take it up. Like all greens, it cooks way down so you wind up with a lot less than you start out with.

I usually make corn bread and sweet potatoes to go with it.

As for the soup, I normally use cabbage, onions, celery, carrots, tomatoes and potatoes. Sometimes I add a few kidney beans. I never add green beans, corn, macaroni, or peas. We have very strict soup making rules in my family. smiley - laugh Really! We even add the vegetables to the broth in a certain order.

Forgot. Sliced cabbage and apples can be cooked together in a skillet much the same way.
